Easy & Delicious Afternoon Treats

Mini Chocolate and Banana Loaves
Ingredients You’ll Need:
- ¼ cup unsalted butter, softened
- ½ cup soft brown sugar
- 1 egg, at room temperature
- ½ cup mashed banana
- 100g dark chocolate, chopped
- 1 cup plain flour
- 1½ tsp ground cinnamon
- 1/2 tsp bicarbonate of soda
- ¼ cup buttermilk
- Icing sugar, sifted, for dusting (optional)
Step 1.
Preheat the oven to 190C. Grease six 5cm×8cm×4cm loaf tins and line the bases with baking paper
Step 2.
Cream the butter and brown sugar in a medium-sized bowl using electric beaters until pale and fluffy. Add the egg and beat until well combined. Stir in the banana and chocolate. In a separate bowl, sift together the flour, cinnamon and bicarbonate of soda. Fold half of the flour mixture into the chocolate mixture. Fold in the buttermilk, then add the remaining flour mixture and stir until just combined.
Step 3.
Spoon into the prepared tins and smooth the surfaces with the back of a spoon. Bake for 25–30 minutes, or until a skewer inserted in the centre of a loaf comes out clean. Allow to stand in the tins for 5 minutes, then turn out onto a wire rack to cool completely. Serve dusted with the icing sugar, if desired.
Ingredients You’ll Need:
- 2 cups plain flour
- 3 tsp baking powder
- ½ tsp salt
- 1 egg
- ¾ cup caster sugar
- 1 cup milk
- 75g melted butter, plus 15g extra for brushing
- ½ cup jam, plus extra for brushing
Step 1.
Combine the flour, baking powder and salt together in a mixing bowl. In a separate bowl, whisk together the egg and sugar first, then add the milk a little at a time to dissolve the sugar, then whisk through the melted butter. Fold the wet ingredients into the flour mixture just enough to combine them. The batter will still be lumpy. Set aside in the fridge for 15 minutes.
Step 2.
Heat your oven to 180C fan-forced (200C conventional). Barely fold the marmalade through the batter (it should still be streaky). Divide the batter between the compartments of a lightly greased, non-stick 12-muffin baking tray until just over ¾ full and bake for about 18 minutes, until the muffins are browned on top and a skewer inserted into the centre comes out clean.
Step 3.
Remove to a rack to cool. While still warm, heat the remaining butter and marmalade in the microwave for 30 seconds until the butter has melted. Stir to combine and brush over the top of the muffins.
Ingredients You’ll Need:
- 2½ garlic cloves
- 4 tbsp olive oil
- 2 sprigs of thyme
- ½ bunch of asparagus, sliced
- 1 handful snow peas, halved
- 1 small zucchini, shaved into ribbons
- Salt and pepper
- 1 lemon, zest and juice
- 4 slices sourdough
- 1 shallot, peeled and sliced into thin rounds
- 16 anchovies
- Fresh herbs
- 1 pinch of chilli flakes
Preserved lemon creme fraiche
- ¼ of a preserved lemon
- 100g creme fraiche
- 1 tbsp of parsley, basil, mint, chopped
- Salt and pepper
- 2 tbsp olive oil
Step 1.
Peel and thinly slice two of the garlic cloves. Gently warm them in a frying pan until they begin to fizz. Add the thyme, asparagus and snow peas. Gently warm them through before adding the zucchini. Remove the pan from the heat. Season with salt, pepper lemon zest and a little juice.
Step 2.
Brush the sourdough with some of this oil then char-grill both sides. Rub the toast with the remaining half of a garlic clove.
Step 3.
To make the lemon creme fraiche, cut away the inside of the lemon leaving only the aromatic peel. Finely dice the peel, so you have about 1 tsp worth. Fold the diced peel through the cream fraiche a little at a time then add the herbs, salt, pepper and olive oil.
Step 4.
Top the toast with a generous spoon of preserved lemon creme fraiche. Spoon out the vegetables from the pan and arrange on the toasts. Top with anchovies, a little more salt and pepper, fresh herbs and chilli flakes.
