Mexican Salsa


The perfect entree dish to accompany your guacamole and corn tortillas! 


Ingredients You’ll Need:

  • 5 tomatoes, seeds removed, finely diced
  • 1 small red onion, finely diced
  • 1/2 bunch coriander, finely chopped
  • Small handful fresh mint leaves, finely chopped
  • 30ml fresh lemon juice
  • Sea salt and freshly ground black pepper

Step 1. 

Combine all ingredients in a bowl and season to taste.

Mexican Fish Tacos With Guacamole


Is it really a mexican feast without tacos? These delicious fish tacos are a fun twist on the Mexican classic. This recipe has a slight kick to it, making it perfect for older kids and adults! 


Ingredients You’ll Need:

  • 500g flathead fillets (or any firm, white-fleshed fish), skin removed
  • 60g plain flour
  • 2 eggs, lightly beaten
  • 150g cornflake crumbs
  • Sea salt
  • Grapeseed oil, for deep-frying
  • 20 small flour tortillas (or use large ones and cut out rounds with a 10cm cutter)
  • 2 handfuls of shredded purple cabbage 
  • 8 tbsp sour cream or creme fraiche
  • 4 tbsp good-quality Mexican chilli sauce
  • Lemon wedges, to serve

For guacamole:


Step 1. 

To make the guacamole, mix all ingredients together.


Step 2. 

Preheat the oven to 160°C.


Step 3. 

Cut the flathead fillets into 20 portions. Put the flour in one shallow bowl, the egg in another and the cornflake crumbs in a third. Lightly season the fish with some sea salt, then dust lightly with flour, coat in the egg and then the cornflake crumbs, patting the crumbs on firmly.


Step 4. 

Heat the grapeseed oil in a wok or deep saucepan to 160°C. Fry the fish in batches for 30 seconds to 45 seconds until golden and crispy, then turn over and cook for a further 30 seconds or until cooked through. Drain on kitchen paper.


Step 5. 

Warm the tortillas on a baking tray in the oven for 3-4 minutes. Fill tortillas with the cabbage, guacamole, fish pieces, sour cream and chilli sauce. Squeeze some lemon juice over the top, then put a skewer through the sides to help hold it all together. Serve immediately.


Mexican Sweet Pumpkin Flan

This delicious dessert is the perfect way to end your at-home Mexican feast. 


Ingredients You’ll Need:

  • 400g pumpkin, peeled and cut into chunks
  • 1 can evaporated milk
  • 5 eggs
  • 1 can condensed milk
  • 1/2 tsp vanilla extract
  • 1/2 cup sugar

Step 1. 

Bring a large pot of water to the boil and boil the pumpkin for 15 minutes, until tender. Drain well and blend to a purée with the evaporated milk.


Step 2. 

Beat the eggs and whisk in the condensed milk, puréed pumpkin and vanilla extract. Try not to let too much air into the mixture or it will create bubbles in the flan.


Step 3. 

Heat your oven to 180°C.


Step 4. 

Heat the sugar in a small saucepan over medium heat until it becomes a dark caramel. This should take 8-12 minutes, depending on the stove. (It takes a while but you have to watch it pretty closely after about the 7-minute mark to make sure it doesn't turn too quickly and burn.)


Step 5. 

Pour the caramel into the base of a 20-centimetre round baking pan (preferably ceramic) and let it harden.


Step 6. 

Pour the pumpkin mixture on top of the caramel. Place the baking pan on top of a wet tea towel inside a larger baking dish in the oven. Pour boiling water into the larger dish until it comes halfway up the side of the round pan. Bake for 1 hour, or until the flan is barely cooked through to the centre. Check doneness by tapping the edge of the pan. The tapping will create a ripple on the top of the custard where it is not set.


Step 7. 

Allow the flan to cool to room temperature, cover with foil, then refrigerate for at least an hour until chilled and well set. Run a knife or spatula around the edge of the flan and turn it out onto a large serving plate. Slice and serve.
