Chilli Con Carne Potatoes
4 x medium sized Sebago Potatoes
500g Lean Beef Mince
1 Can Peeled Tomatoes
1 Can Kidney Beans
2 teaspoons of Newman's Chilli and Garlic
Salt and Pepper to taste
1 Brown Onion - diced
1 Cup Grated Cheese
Chilli Sauce of Choice to drizzle
Table Spoon of Greek Yoghurt to serve
Roast the Potatoes at 190 degrees for 1 hour.
While roasting, sauté the diced onion with chilli and garlic and then add the mince meat. Once cooked add in the kidney beans and tomatoes, salt and pepper to taste.
When potatoes are done slice a cross in them, add the meat and top with grated cheese and pop back in the oven for 5-10mins.
Serve with a dollop of Greek yoghurt or sour cream and a drizzle of your favourite chilli sauce!
