Bitey Blood Orange Salad

For the salad:

  • 4 Baby fennel (Sliced 2-3mm)
  • 2 Spanish Onion (Sliced 2-3mm)
  • 3 Heirloom Tomatoes (Sliced 3-4mm & Quartered)
  • Blood Oranges (Halved & sliced 3-4mm)

For the vinaigrette:

  • 100ml Rusty Bus Olive Oil
  • 60ml Fresh Navel Orange Juice
  • 1tbsp Seeded Mustard
  • Salt & Pepper

Method:

  1. Combine ingredients in a bowl.
  2. Combine vinaigrette ingredients in a sealed jar & shake vigorously.
  3. Pour vinaigrette over salad & mix well.
