Bitey Blood Orange Salad
For the salad:
- 4 Baby fennel (Sliced 2-3mm)
- 2 Spanish Onion (Sliced 2-3mm)
- 3 Heirloom Tomatoes (Sliced 3-4mm & Quartered)
- 4 Blood Oranges (Halved & sliced 3-4mm)
For the vinaigrette:
- 100ml Rusty Bus Olive Oil
- 60ml Fresh Navel Orange Juice
- 1tbsp Seeded Mustard
- Salt & Pepper
Method:
- Combine ingredients in a bowl.
- Combine vinaigrette ingredients in a sealed jar & shake vigorously.
- Pour vinaigrette over salad & mix well.
