FOR THE ULTIMATE CURRY MEAL: Make enough rice for two by rinsing 1 cup of rice under cold water. In a pot, bring 1 ½ cups of water to a boil with a pinch of salt. Add the rice, cover, reduce heat to low, and let simmer for 15-18 minutes until water is absorbed. Remove from heat, let sit covered for 5 minutes, then fluff with a fork and serve alongside our Potato and Eggplant Curry.
