A great vegan curry which is full of flavour and has a good kick. We roast butternut to increase the sweetness and intensity of its taste and then combine with our special vegan curry paste, coconut milk, blanched almonds, cherry tomatoes, fresh Thai basil and lime leaves. Feeds two people when added to staples such as rice and greens.
Chef’s suggestion: For best results eat with steamed brown rice which will bring out the nuttiness of the curry paste, or add a few extra vegetables in it and use it as a base for your own great creation. Add a little extra coconut cream or plain yoghurt, if you wish to cool it down a bit.
